Tradition and innovation characterise and identify the Zýmē winery, located in the heart of the Valpolicella Classica area in a 15th century sandstone quarry, now restored and marking the strong bond between the company and the territory. The winery, whose name literally means “yeast”, works under an organic farming regime, with a focus on respect for nature and a care for new wines that enhance the Valpolicella territory. From Black To White is a label with a linear and minimal design that plays on the black/white contrast alluding to the genetic mutation of the Rondinella variety from red to white berries. In one definition, this wine from Zýmē represents a wine that was not there, and is made 60 per cent from the white Rondinella variety, 40 per cent from the Gold Traminer, 15 per cent from the Kerner, and 10 per cent from the Incrocio Manzoni. The grapes are pressed and destemmed, followed by cryomaceration on the skins and alcoholic fermentation at a controlled temperature in cement tanks for about 20 days. Ageing takes place on the lees for at least 6 months with frequent lees stirring. From Black To White is light golden yellow in the glass, with greenish reflections. Excellent viscosity, on the nose it reveals hints of white flowers such as acacia and primrose, fruit notes such as golden apple, grapefruit and aromatic herbs such as elderberry. Delicate and elegant, it is excellent as an aperitif, but also fully expresses itself with shellfish, fish, asparagus risotto, herbs and spicy food.
