TASTING NOTES

Valpolicella Superiore Case Vecie is produced by the vinification of fresh grapes, mainly Corvina and Corvinone. It takes its name from the homonymous vineyard of Grezzana, where the ripening of the grapes is subject to important temperature changes between day and night: a climatic characteristic that gives the wine a particular spice to the nose and a unique polyphenolic profile. The vinification in red ensures the contact of the skins for the entire fermentation process and the extraction of color is guaranteed by 2 daily pumping over and a half-fermentation delestage. The temperature during the entire fermentation process is kept at about 22 It is then aged for 8 months and 1 year in large wood. On the palate, acidity denotes an imported structure, the result of the selection of grapes and vinification techniques aimed at extracting only the most noble component from the skin. A Valpolicella capable of putting together good body, structure and an excellent drink, revealing the sensorial complexity resulting from a slow ripening of the grapes.
