TASTING NOTES

Production

Valpolicella Ripasso Classico Superiore is a red wine made from 70% Corvina, 20% Rondinella and 10% Molinara. The grapes are harvested by hand, pressed immediately and fermented with temperature-controlled maceration. In early March, the Valpolicella Classico is passed over the Amarone pomace just once. It is aged in large wooden casks for 12 months and then for a further 6 months in the bottle. E=348 kJ/100 ml - 83 kcal/100 ml

Organoleptic Characteristics

Visually, the colour is ruby red. On the nose, there are slightly dried fruit aromas such as cherry, spicy notes such as cocoa, and balsamic hints. On the palate, it is warm, full-bodied, elegant and with velvety tannins.

Occasion and Pairing

Perfect for everyday drinking and paired with red meats, roasts and braised dishes.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

THE WINERY

Speri

The history of the Speri family, among the most renowned winemakers in Veneto, began in the first half of the 19th century: around their home, in the heart of Valpolicella, the first vineyards were already being cultivated. From generation to generation, the estates have expanded, and with the strength of great experience and authority in the area, the Speri winery is now an undisputed point of reference in the Italian wine scene. The sixty acres of Speri vineyards are managed by three generations of the family with great care: together they express the traditional philosophy they inherited with a more contemporary idea of organic farming, the conversion of which began in 2014. Only its own grapes are processed at the Speri winery. Keeping production volumes low, each step that brings the grapes to the bottle is directly supervised by the managing family. As a result, the wines of the Speri winery turn out to be among the most unmistakable and appreciated reds: from Amarone to Valpolicella Speri, it is a tribute to tradition on the palate.
