Production

Santa Sofia’s Valpolicella Ripasso Classico Superiore is made from Corvina, Corvinone and Rondinella grapes. After harvesting, the grapes are destemmed and gently crushed, then macerated for around 10 days in stainless steel, followed by 3 days of maceration and refermentation on the pomace of Amarone and Recioto. After vinification, the wine is left to rest for 9 months in large Slavonian oak barrels, followed by at least a further 6 months in the bottle. 100 ml: 344 kJ / 82 kcal

Organoleptic Characteristics

It has a clear ruby red colour with a slightly garnet rim. On the nose, there are notes of black cherries in alcohol, prunes, dried flowers and cloves. On the palate, it is full-bodied with silky, velvety tannins and well-balanced acidity, finishing with a long, clean aftertaste.

Occasion and Pairing

This Veneto red wine is perfect for everyday drinking and pairs well with red meat.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

Santa Sofia

In Pedemonte, in the heart of the Veneto region and in one of the best-known areas for the production of quality wines, stands the Santa Sofia winery, inside an ancient aristocratic villa designed and built by the renowned architect Andrea Palladio. Since the 1960s, the winery has been in the hands of the Begnoni family, which has also owned it since then. With its 53 hectares of mainly stony land, the winery, under the leadership of the family, has always had the goal of expanding its distribution both nationally and internationally. Initially intending to offer all typical Veronese productions, the company has focused on specific products and selected crops over time, the products of which are harvested in the vineyard with extreme care at every single step. Today Santa Sofia produces and distributes very structured and elegant red wines, including Valpolicella Superiore Montegradella, Recioto della Valpolicella, Bardolino, Amarone, Arlèo, Merlot Corvina and Predaia.
