Production

Santa Sofia’s Valpolicella Ripasso Classico Superiore is made from Corvina, Corvinone and Rondinella grapes. After harvesting, the grapes are destemmed and gently crushed, then macerated for around 10 days in stainless steel, followed by 3 days of maceration and refermentation on the pomace of Amarone and Recioto. After vinification, the wine is left to rest for 9 months in large Slavonian oak barrels, followed by at least a further 6 months in the bottle. 100 ml: 344 kJ / 82 kcal

Organoleptic Characteristics

It has a clear ruby red colour with a slightly garnet rim. On the nose, there are notes of black cherries in alcohol, prunes, dried flowers and cloves. On the palate, it is full-bodied with silky, velvety tannins and well-balanced acidity, finishing with a long, clean aftertaste.

Occasion and Pairing

This Veneto red wine is perfect for everyday drinking and pairs well with red meat.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

Santa Sofia

The Veneto, one of the areas of Italy where wine production is best known and most prestigious. It is here, near Verona, that the 8 hectares of vineyards belonging to the Sartori winery, founded in the late 19th century, are located. Different vineyards are cultivated on the hills of this area of Valpolicella, with different sun exposures and soil compositions. Everything contributes to the production of very different grapes and wines, but always elegant and with distinctive aromas. Careful production from the earliest stages and harvesting ultimately results in fine red wines from Veneto such as Amarone, Valpolicella and Bardolino and fresh white wines from Verona including Lugana, Bianco di Custoza and Soave. Every wine produced and sold in this winery conveys the most authentic Veronese tradition, but reinterpreted in a personalised way.
