Valpolicella Superiore is one of the great wines of the Veronese tradition, known and loved for its sobriety and elegance. Compared to its namesake Valpolicella, it owes its superiority to an aging in oak wood, which enriches its structure and complexity. Compared to Valpolicella Classico, of which it follows the vinification, this Valpolicella Superiore ages 12 months in wood, 50% Slavonian oak barrels and 50% barriques. It consists of a blend of grapes such as 70% Corvina Veronese, 25% Rondinella and 5% Oseleta. Bright ruby red in color, it opens with a captivating hint of red berries. Perfectly ripe grapes and great attention in the cellar for the interpretation of Allegrini house of the historical typology of the territory. On the nose the notes of cherry stand out clearly on a background of aromatic herbs, white pepper and undergrowth. In the mouth the fullness of the sip is perfectly governed by the presence of acid and sapid that gives tension and extension to a wine of substance and finesse. It goes perfectly with roast meats, especially pork, guinea fowl, goat and lamb. Excellent with mushroom dishes and medium-aged cheeses. To fully appreciate its style, this wine should be served at a serving temperature of 14/16 ºC.
