TASTING NOTES

Valpolicella Classico Superiore DOC is made from Corvina, Corvinone, Rondinella, Molinara and Oseleta. The bunches are harvested by hand and the selected grapes are pressed after 15 days of drying in the drying loft. The fermentation and maceration process takes place in stainless steel at a controlled temperature and it lasts about 15-20 days. This is followed by ageing in large wood. A ruby red wine. An ample aroma of flowers is revealed on the nose. On the nose, there are very intense notes of black cherry and red berry fruit emerge, with pleasant hints of spices. THE WINERY

Rubinelli Vajol

In the hilly areas of Veneto lies the Conca del Vajol. With its soils with a strong presence of limestone and tufa, with traces of clay and skeleton, it is home to the Cantina Rubinelli Vajol and its 10 hectares of vines, in the heart of the Valpolicella territory. Perfect sun exposure of the vines and a temperate, well-ventilated climate provide ideal terrain for the cultivation of prized grapes, most of which are the indigenous Corvina, Corvinone, Rondinella, Molinara and Oseleta. The grapes are cultivated and cared for using different methods, the traditional ones and some more modern ones. In addition, the land is respected to the highest level with regards to its form, also thanks to the use of mechanical weeding instead of herbicides and synthetic fertilisers. The absolute quality of the wines produced in the winery is also due to a harvest that is entirely carried out by hand in successive steps, depending on the necessary maturation period of the grapes. The result is an absolute excellence of Veneto red wines such as Amarone, Valpolicella Classico Superiore, Recioto, Ripasso and Valpolicella Classico.
