TASTING NOTES

Soffocone di Vincigliata Toscana Rosso IGT is a 100% Sangiovese, with a small percentage of Canaiolo and Colorino, produced in the Fiesole area. Vinification takes place in stainless steel, with aging in barriques for 15 months. At the sight, the wine is ruby red, bold and bright. The nose shows notes of cherries and raspberry, with hints of tobacco. On the palate, powerful and elegant at the same time. Great freshness and well blended tannins. Toscana Rosso IGT Soffocone di Vincigliata di Bibi Graetz goes perfectly with first and second courses based on red meat or tomato sauces. THE WINERY

Bibi Graetz

Born into a family of artists, after his studies at the Academy of Fine Arts in Florence, Bibi Graetz took over the family vineyards around the castle of Vincigliata in the hills of Florence in 2000 and from a few barriques of Sangiovese, Colorino and Canaiolo his most iconic wines were born: Testamatta and Colore. The artist's background is clearly evident in the bottles where the labels are pictures painted by Bibi. Vineyards well over 50 years old and at altitude, the choice of indigenous vines and a natural approach in the winery are the founding elements of Bibi's vision of organic and sustainable viticulture. In 2019, Bibi Graetz's winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence and converted into a winery to house Testamatta and Colore, as well as Bibi and his family.
