TASTING NOTES

Production

Sfursat is produced through the natural drying of the grapes, aided by the cool, dry winds of the Alps. The resulting wine is a unique Nebbiolo: rich and austere, yet with the mineral and fresh characteristics typical of mountain wines. The Chiavennasca vineyards are situated within the Valtellina DOC and DOCG appellations, on the slopes of the Rhaetian Alps, along the right bank of the Adda river, with a south-facing aspect at an altitude ranging from 300 to 550 metres above sea level. From late September, the grapes are harvested by hand and placed in 4.5 kg crates. The grapes are left to dry in the drying room, losing around 30% of their weight. Between December and early January, vinification takes place at a controlled temperature, with prolonged maceration lasting 15–20 days. This is followed by two years of ageing, at least one of which is in wood. 100 ml: E=357 kJ/86 kcal

Organoleptic Characteristics

In the glass, it presents a medium-intensity ruby red colour; on the nose, it is intense and complex with notes of ripe red fruit and spices, such as pepper and cinnamon. Dry on the palate, with notes of black fruit, and present, austere tannins. A full-bodied, persistent wine, with hints of cloves and liquorice. 

Occasion and Pairing

Ideal with roast red meats, game or the local Bitto cheese. 

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 15–16°C.
