The estate is entirely dedicated to biodynamic farming: across the seven hectares of vineyards at the estate, flora, fauna and man come together in a unique harmony. In these idyllic surroundings, human intervention is kept to a minimum, so that the characteristics of the terroir and the grape variety can express themselves to the full. As you stroll through the vineyards, you can not only hear the birdsong, but also the symphonies of Mozart and Gregorian chants drifting from the music room located within the estate, near the winery, the wine press house and the barrel cellar. At Tenuta Mara, healthy grapes at the right stage of ripeness are harvested by hand and transported to the cellar, where they undergo a rigorous sorting process. This is followed by alcoholic fermentation in truncated-conical oak vats, without temperature control and without the addition of selected yeasts. Once the wine is deemed ready, it is then transferred to the barrel cellar, accompanied by the gentle melodies of classical music. Thus is born Rubicone Sangiovese Guiry, which, after alcoholic fermentation, matures on the fine lees for 12 months in small French oak barrels and small concrete vats. It then finishes its ageing in the bottle for 6 months.
The result is a wine that appears in the glass as a moderately intense, clear ruby red. On the nose, it reveals delicate floral nuances of broom and roses, accompanied by small red fruits and an incredibly spicy finish, tending towards aniseed. On the palate, it is smooth, with well-integrated tannins and moderate freshness. Menthol notes are perceptible on the finish.
Suitable for everyday drinking, it pairs well with red meat dishes.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
