After the harvest, the grapes are destemmed and gently pressed to separate the juice from the seeds. Fermentation takes place in stainless steel tanks, at a controlled temperature, to best preserve the wine's organoleptic characteristics, such as its fruity aromatic profile and vibrant color. Once fermentation is complete, the wine is left to mature for at least 12 months in large oak barrels. This aging process helps to consolidate and further enrich the aromatic qualities, giving the wine greater balance and a long-lasting taste. This wine expresses the full character of the great red wines of the Marche region. It has an intense ruby red color, enriched by violet reflections that make it visually captivating. On the nose, it offers a complex and enveloping bouquet, dominated by scents of ripe red fruits such as cherry and plum, accompanied by delicate notes of spices and vanilla, a distinctive feature from the oak aging. On the palate, the wine reveals itself as robust and well-structured, with soft tannins that provide a pleasing elegance. The perfect balance between freshness and smoothness delivers a harmonious sensation, while the long persistence leaves a fruity and slightly spicy aftertaste that invites another sip. A wine that combines power and refinement, making it ideal for various occasions. It is perfect for both formal and informal settings. For example, it pairs wonderfully with rich dishes, especially Italian cuisine, but it also goes excellently with traditional Marche dishes, such as olive all'ascolana or vincisgrassi.
