TASTING NOTES

Production

Aetos is made from pure Sangiovese grapes grown in the Tenuta Sanoner vineyards, located in the Val d'Orcia, an area recognized for its elegance and expressive finesse. Harvesting is manual with careful selection of bunches. Fermentation takes place in steel, followed by refinement in wood (oak barrels) and a further period in the bottle. The production philosophy aims to enhance the character of Sangiovese in a balance between tradition and modern precision.

Organoleptic Characteristics

Intense and bright ruby red, with slight garnet reflections over time. Elegant and territorial bouquet: ripe cherry, red berries and purple, accompanied by notes of sweet spices, delicate tobacco and light earthy nuances. On the palate it is harmonious, fresh and well structured. The tannins are fine and well integrated, supported by a pleasant acidity and a clear savoury imprint. Balanced and persistent finish, with fruity and spicy returns.

Occasion and Pairing

It pairs perfectly with traditional Tuscan cuisine, especially first courses with ragù, grilled red meats, roasts and braises, and medium-ripened aged cheeses, making it ideal even with dishes based on mushrooms and black truffles.
