Aetos is made from 100% Sangiovese grapes grown in the vineyards of Tenuta Sanoner, situated in the Val d’Orcia, a region renowned for its elegance and expressive finesse. The grapes are harvested by hand with careful selection of the bunches. Fermentation takes place in stainless steel, followed by ageing in wood (oak barrels) and a further period in the bottle. The production philosophy aims to enhance the character of Sangiovese, striking a balance between tradition and modern precision.
Intense and brilliant ruby red, with subtle garnet hues over time. An elegant, terroir-driven bouquet: ripe cherry, red forest fruits and violet, accompanied by notes of sweet spices, delicate tobacco and light earthy undertones. On the palate, it is harmonious, fresh and well-structured. The tannins are fine and well-integrated, supported by a pleasant acidity and a distinct savoury character. The finish is balanced and persistent, with fruity and spicy notes.
It pairs perfectly with traditional Tuscan cuisine, particularly pasta dishes with meat sauce, grilled red meats, roasts and braised meats, and medium-aged cheeses, and is also ideal with dishes featuring mushrooms and black truffles.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
