TASTING NOTES

Production

Aetos is made from 100% Sangiovese grapes grown in the vineyards of Tenuta Sanoner, situated in the Val d’Orcia, a region renowned for its elegance and expressive finesse. The grapes are harvested by hand with careful selection of the bunches. Fermentation takes place in stainless steel, followed by ageing in wood (oak barrels) and a further period in the bottle. The production philosophy aims to enhance the character of Sangiovese, striking a balance between tradition and modern precision.

Organoleptic Characteristics

Intense and brilliant ruby red, with subtle garnet hues over time. An elegant, terroir-driven bouquet: ripe cherry, red forest fruits and violet, accompanied by notes of sweet spices, delicate tobacco and light earthy undertones. On the palate, it is harmonious, fresh and well-structured. The tannins are fine and well-integrated, supported by a pleasant acidity and a distinct savoury character. The finish is balanced and persistent, with fruity and spicy notes.

Occasion and Pairing

It pairs perfectly with traditional Tuscan cuisine, particularly pasta dishes with meat sauce, grilled red meats, roasts and braised meats, and medium-aged cheeses, and is also ideal with dishes featuring mushrooms and black truffles.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Tenuta Sanoner

Tenuta Sanoner is a young yet strongly identity-driven estate, expressing a conscious, biodynamic agricultural vision deeply rooted in the principles of harmony between humankind, nature, and terroir. Born from the experience and sensitivity of the Lageder family, the estate represents a coherent and authentic project that places respect for ecosystems, soil vitality, and natural balance at its core—values that are clearly reflected in the wines it produces. The vineyards of Tenuta Sanoner are located in highly prestigious settings between Alto Adige and Tuscany, two distinct territories united by a strong viticultural vocation and ideal conditions for quality winegrowing. Here, on rich and complex soils cultivated according to certified biodynamic principles, the vines are tended with extreme care, promoting biodiversity, minimizing intervention, and respecting the natural rhythms of plants and seasons. Every agronomic choice is guided by the belief that only a healthy, living environment can give rise to wines of true authenticity and depth. In the cellar, the same philosophy of coherence and respect prevails: gentle vinifications, minimal intervention, spontaneous fermentations, and a measured use of wood and sulfur, with the aim of guiding the wine rather than forcing it. Both native and international grape varieties are interpreted with an essential and elegant approach, allowing the character of the terroir and the vintage to emerge with clarity and precision. The result is a range of balanced, luminous, and vibrant wines, distinguished by aromatic finesse, natural energy, and great drinkability - wines that speak of ethical and responsible viticulture while remaining deeply expressive and emotionally engaging. Each bottle of Tenuta Sanoner is the expression of a thoughtful agricultural project, an invitation to rediscover the value of time, nature, and the true essence of wine. Producer/Distributor name and address: Tenuta Sanoner - wine project of the Lageder family. The winery’s products should be stored in a cool, dry place, away from sources of heat.
