TASTING NOTES

Le Piane winery is located in the Natural Park of Monte Fenera, in the province of Novara and is today one of the wine reference points of northern Piedmont. Mimmo Rosso di Le Piane is a red wine produced with a blend of Nebbiolo, Croatina and Vespolina in the municipality of Boca, in the province of Novara. The wine is called Mimmo to honor a great person, who collaborated in the qualitative growth of Le Piane. Mimmo was wanted to open a new road by binding together the most known grapes of these areas, which are harvested manually and then be takendestemmed with a fermentation and long maceration of 30 days for Nebbiolo and aging in cask for two years for Croatina and Vespolina. The wine is then aged for one year in tonneaux and one year in large Slavonian oak barrels. To the glass Mimmo has a ruby red color with garnet reflections and on the nose emerge scents of plum, wild strawberries, licorice and aromatic herbs. The palate is fresh and mineral with velvety tannins. Mimmo is perfect to accompany pasta dishes, meat dishes and mature cheeses: in particular it goes perfectly with Fassona meat. Founded in 1998 by Christoph Kunzli and Alexandr Trolf, Le Piane winery is located in the Natural Park of Monte Fenera, in the province of Novara. The excellence of Le Piane winery is the result of the combination of a terroir favorable to the cultivation and recovery of ancient traditions: the volcanic soil and the prealpine climate define the wines of Le Piane. The company works in complete respect of nature, using only copper and sulfur in the vineyard, with organic phytopharmaceuticals and in the cellar are preferred spontaneous fermentation, thanks to the action of indigenous yeasts.
