Monte Rossa’s Franciacorta Brut Cabochon Fuoriserie N.026 is crafted from a selection of the finest Chardonnay and Pinot Noir grapes sourced from prime vineyards in Franciacorta. The grapes are harvested by hand and vinified separately by plot, with fermentation taking place in stainless steel and partly in wood. The second fermentation follows the Metodo Classico, with a very long ageing on the lees that imparts depth, complexity and elegance. The Brut dosage is calibrated to express balance, finesse and terroir.
Bright golden yellow in colour, with a very fine and persistent perlage. The nose is broad and complex, with notes of ripe citrus, yellow-fleshed fruit, dried fruit, bread crust and light toasted and mineral nuances. On the palate, it is structured and creamy, with great freshness, savouriness and a long, elegant and harmonious finish.
A highly prestigious Franciacorta, ideal for special occasions and to accompany haute cuisine, shellfish, full-bodied fish and refined white meats.
To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
