Production

The winery’s flagship label, with its name “Cabochon”, this Franciacorta evokes the preciousness of jewellery. Refinement, intensity, elegance and an endless perlage make this sparkling wine a prestigious and precious Franciacorta. Brilliant golden straw-yellow in colour, with a fine and persistent perlage, Monte Rossa’s Franciacorta Cabochon Brut Fuoriserie N.025 is made from 70% Chardonnay and 30% Pinot Noir, vinified in stainless steel and aged for a long time in the bottle.

Organoleptic Characteristics

This Metodo Classico sparkling wine is bright and flamboyant, with a straw-yellow colour and greenish highlights. On the nose, it is fragrant and intense, evoking aromas of bergamot, chamomile and jasmine. On the palate, it is crisp, with great persistence and a floral-citrus finish.

Occasion and Pairing

An ideal sparkling wine to accompany any meal, perfect for a romantic dinner, perhaps featuring fish, seafood and shellfish.

THE WINERY

Monte Rossa

The Montelvini winery, a historic family business with more than 140 years of experience, is based in Venegazzù di Volpago del Montello, in the heart of the Asolo Montello DOCG. With about 35 hectares of vineyards part of a total estate of 200 hectares, it mainly grows Glera grapes on its Le Zuitere and Fontana Masorin estates. Montelvini is renowned for its Asolo Prosecco Superiore DOCG, particularly the Serenitatis Collection in the Brut and Extra Brut versions, noted for elegance, freshness and fine perlage. Innovative and attentive to the terroir, it was the first winery in Asolo DOCG to launch a Cru, produced from vineyards at 333 meters above sea level and characterized by a floral and mineral profile. Equalitas-certified for environmental, social and economic sustainability, Montelvini has received prestigious awards such as the Vinibuoni d'Italia Crown and the Felix Industry Award, confirming it as a benchmark for high-quality Prosecco.
