In 1987, Cabochon was born from the intuition of Emanuele Rabotti, who sought to carefully select the crus from the hillside and experiment with a new winemaking method that introduced barriques for the first fermentation of the must. The results were so remarkable that the wine quickly became a key label for the winery, with its name “Cabochon” evoking the preciousness of gemstones. Refinement, intensity, elegance, and an endless perlage make this sparkling wine a prestigious and valuable Franciacorta. With its brilliant golden straw color and fine, persistent perlage, Franciacorta Cabochon Brut Fuoriserie N.024 from Monte Rossa is made from 70% Chardonnay and 30% Pinot Nero. It is fermented in steel tanks and undergoes extended bottle aging. This Metodo Classico sparkling wine is bright and striking, with a yellow straw color and greenish reflections. On the nose, it is fragrant and intense, evoking aromas of bergamot, chamomile, and jasmine. On the palate, it is crisp, with great persistence and a floral-citrusy finish. An ideal sparkling wine for any occasion, particularly when paired with a romantic dinner featuring fish, seafood, and shellfish. To fully appreciate its style, it should be served at a temperature of 8-10°C.
