Cabochon was born in 1987, from Emanuele Rabotti's intuition to select the hillside crus more carefully and to experiment with a new vinification system that introduced the barrique for the first fermentation of the must. The results were such that the resulting wine soon became a key label of the company, with its name “Cabochon” evoking the preciousness of jewellery. Refinement, intensity, elegance and an interminable perlage make this sparkling wine a prestigious and precious Franciacorta. A brilliant golden straw yellow colour with a fine and persistent perlage, Monte Rossa's Franciacorta Cabochon Brut Fuoriserie N.022 is made from 70% Chardonnay and 30% Pinot Noir grapes, vinified in stainless steel and aged in the bottle for a long time. This Metodo Classico sparkling wine is bright and flamboyant, straw yellow in colour with greenish reflections. On the nose it is fragrant and intense, evoking scents of bergamot, camomile and jasmine. On the palate it is crisp, with great length and a floral-citrus return. An ideal sparkling wine for the whole meal if you want to treat yourself to a romantic dinner, perhaps with fish, seafood and shellfish.
