TASTING NOTES

Exultet is an elegant and refined interpretation of Fiano di Avellino, a Cru produced exclusively with grapes from a single vineyard of Fiano located in Lapio. After a long pressing of the whole bunches, the draining must protected by oxygen is separated from the pressing must and clarified by natural sedimentation. Its particular elegance comes from the short stay, during fermentation, in small oak barrels for 30% and follows a steel aging on the lees for 8 months. The name of the wine comes from the Exultet of Mirabella Eclano, or the liturgical scrolls of the southern Middle Ages. The glass has a bright yellow color, with green reflections and clear varietal aromas of lime, acacia and thyme. The palate has a dense structure and continues to develop aromas of exotic fruit, candied citrus and honey in a very light mineral matrix. Good freshness on the finish, Exultet is excellent in combination with fresh cheeses or pasta dishes based on fish and shellfish. Quintodecimo

The company Quintodecimo represents a reality of quality reference of the entire panorama of wines from Campania. The name is a tribute to the ancient history of Mirabella Eclan, during the struggles between the Lombards and the Byzantines, destroyed by the Greek army of Constans II and called Quintum decimum because it is exactly 15 miles from ancient Benevento. Between the tenth and the eleventh century, the town moved on the ridge of the current hill, taking the name of Mirabella Eclano. Luigi Moio, after studying wine research in Burgundy, returned to Italy in the mid-nineties and from 2001, together with his wife Laura, he started the Quintodecimo company. The idea was to create wines that combine human wisdom and technique to a territory of excellence such as Irpinia.
