Ayunta is a small winery situated at almost 700 metres above sea level, on the northern slopes of Mount Etna in Sicily, near the small village of Randazzo, north of the city of Catania. Their aim is to produce wines that best express the character of the terroir and the native grape varieties of Etna. The wines express elegance, balance and freshness, highlighting the pure character of the terroir and the distinct differences of each vintage across every single vineyard. There are approximately 3 hectares of vineyards spread across various points on the slopes of Mount Etna, where local red grape varieties such as Nerello Mascalese and Nerello Cappuccio are cultivated, whilst Carricante and Catarratto are the white varieties. The terroir is obviously volcanic, with the presence of rocks and ash, but varies from one plot to another depending on the geological history of the volcano’s eruptions. Etna Rosso Calderara Sottana is a Sicilian red wine produced from a careful selection of 100% Nerello Mascalese grapes, grown in the Calderara Sottana district, where the oldest vines lend it a unique character. Once fermentation has taken place in stainless steel tanks with wild yeasts and a 21-day maceration, the wine is ready to age in 5-hectolitre tonneaux and French oak barriques for approximately 18–20 months. Ruby red in colour with subtle garnet highlights, the nose is dominated by notes of undergrowth and flowers, followed by elegant spicy notes. On the palate, the wine is full-bodied, dry, warm and intense. Mineral notes of graphite stand out above all.
A structured wine that pairs beautifully with Sunday red meat dishes.
To fully appreciate its style, this wine should be served at a temperature of 14–16°C.
