Production

Schiopetto’s Collio Sauvignon is grown in the hillside vineyards of the Collio region, on ponca soils that lend the wine a distinct minerality and great aromatic finesse. The Sauvignon grapes are harvested by hand in several stages to ensure maximum precision in ripening. Vinification takes place in temperature-controlled stainless steel tanks, with the aim of preserving the varietal expression and aromatic complexity. Ageing continues in steel on the fine lees, with periodic bâtonnage, which imparts structure and balance whilst maintaining freshness and elegance, the hallmark of the Schiopetto winery.

Organoleptic Characteristics

Visually, it is a brilliant straw-yellow colour with greenish highlights. On the nose, it is intense and refined, with aromas of elderflower, tomato leaf, sage and aromatic herbs, accompanied by notes of citrus, exotic fruit and light mineral undertones. On the palate, it is fresh and taut, with lively acidity, marked savouriness and an elegant structure leading to a long, precise and persistent finish.

Occasion and Pairing

A wine of great personality and finesse, ideal as a distinctive aperitif or throughout a meal. It pairs perfectly with fish dishes, shellfish, herb-infused risottos, vegetables, fresh cheeses and asparagus-based dishes.
