Production

Collio Sauvignon di Schiopetto is born in the hilly vineyards of Collio, on ponca soils that give the wine a marked minerality and great aromatic finesse. Sauvignon grapes are harvested manually in several steps, to ensure maximum precision in ripening. Winemaking takes place in temperature-controlled steel, with the aim of preserving varietal expression and aromatic complexity. The refinement continues in steel on the fine yeasts, with periodic bâtonnages, which give structure and balance while maintaining freshness and elegance, a stylistic signature of the Schiopetto winery.

Organoleptic Characteristics

It appears bright straw yellow with greenish reflections. On the nose it is intense and refined, with scents of elderberry, tomato leaf, sage and aromatic herbs, accompanied by notes of citrus, exotic fruit and light mineral nuances. On the palate it is fresh and tense, with a lively acidity, a marked saltiness and an elegant structure that leads to a long, precise and persistent finish.

Occasion and Pairing

Wine of great personality and finesse, ideal as a character aperitif or a full meal. It pairs perfectly with fish dishes, shellfish, herb risottos, vegetables, fresh cheeses and asparagus preparations.

Serving Temperature

To best enhance its freshness and aromatic intensity, a serving temperature of 10/12°C is recommended.
