The Chianti Classico Riserva di Castellare di Castellina is a bottle with a territorial imprint, produced from Sangiovese grapes with a small percentage of Canaiolo harvested in early October and first fermented in steel, then put to rest for 15 months in barrique and tonneaux of French oak and then in bottle. This long aging gives the wine roundness and evolution, richness and expressiveness and a great balance. In the glass is a brilliant ruby red with delicate garnet reflections. The nose expresses the richness of the fruit and with great intensity recalls ripe cherries, floral and spicy sensations, with a refined deeper nuance that recalls leather. The palate is complex, structured and rich, with velvety tannins and well-present. The finish is balanced and fresh. To drink at all meals together with roasts of red and white meat and to accompany medium-aged cheeses. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC.
