TASTING NOTES

Production

Fontodi is a certified organic estate covering 170 hectares, of which more than 80 are planted with vines. The farming practices employed are inspired by principles of naturalness and sustainability. According to Fontodi’s philosophy, respecting the environment leads to the production of better, cleaner wines that better express the terroir. Since 1968, Fontodi has belonged to the Manetti family, who have been dedicated for centuries to the production of terracotta and to the increasingly careful cultivation of Sangiovese vineyards in the territory of Panzano, a hamlet of the municipality of Greve in Chianti, in the province of Florence, an area known as the ‘golden basin’. All Fontodi wines are produced from grapes grown in their own vineyards, harvested by hand and carefully selected. Certainly an interesting Tuscan producer. The Chianti Classico Bio Fontodi is a 100% Sangiovese, a red wine with traditional characteristics, an expression of the Chianti terroir. It ferments naturally with indigenous yeasts, undergoing long maceration, followed by ageing for 18 months in Tronçais and Allier barriques and 6 months in the bottle.

Organoleptic Characteristics

It has an intense ruby red colour, with floral hints of violet and toasty notes of leather and tobacco. On the palate, it is full-bodied and assertive, with pronounced tannins and a long, spicy finish.

Occasion and Pairing

Perfect for accompanying a Sunday lunch, perhaps with a red meat menu inspired by Tuscan tradition.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

Fontodi

After the death of his brother, Franck Pascal decided to take over a small family farm, gradually converting it to biodynamic cultivation. It is from this initial project that, together with his wife Isabelle, he decided to expand his dowry as a viticulturist and began to produce Champagne, through total rejection of pesticides, herbicides and other artificial chemicals. The names given to Champagne recall the principles of naturalness, genuineness and balance: refined and elegant wines, with fresh and intense aromas, the result of highly experimental techniques.
