TASTING NOTES

Production

Fontodi is a certified organic estate covering 170 hectares, of which more than 80 are planted with vines. The farming practices employed are inspired by principles of naturalness and sustainability. According to Fontodi’s philosophy, respecting the environment leads to the production of better, cleaner wines that better express the terroir. Since 1968, Fontodi has belonged to the Manetti family, who have been dedicated for centuries to the production of terracotta and to the increasingly careful cultivation of Sangiovese vineyards in the territory of Panzano, a hamlet of the municipality of Greve in Chianti, in the province of Florence, an area known as the ‘golden basin’. All Fontodi wines are produced from grapes grown in their own vineyards, harvested by hand and carefully selected. Certainly an interesting Tuscan producer. The Chianti Classico Bio Fontodi is a 100% Sangiovese, a red wine with traditional characteristics, an expression of the Chianti terroir. It ferments naturally with indigenous yeasts, undergoing long maceration, followed by ageing for 18 months in Tronçais and Allier barriques and 6 months in the bottle.

Organoleptic Characteristics

It has an intense ruby red colour, with floral hints of violet and toasty notes of leather and tobacco. On the palate, it is full-bodied and assertive, with pronounced tannins and a long, spicy finish.

Occasion and Pairing

Perfect for accompanying a Sunday lunch, perhaps with a red meat menu inspired by Tuscan tradition.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

Allergens: Solfiti

THE WINERY

Fontodi

In the areas south of Panzano, in the Chianti Classico area, there is a valley called "Conca d'Oro". Here the Manetti family, which has always specialized in the production of terracotta and in the careful cultivation of Sangiovese in the area, in 1968 established the headquarters of the Fontodi winery, producer of Tuscan wines of real quality. Covering more than 170 hectares, more than 80 of which are dedicated to vineyards, the company, certified organic, acts with the utmost respect for the integrity of the land, its naturalness and sustainability. Fontodi, by not using chemicals, tries to value internal resources and reduce what comes from the outside. Fertilization takes place thanks to a compound obtained with pruning residues and the manure of a herd of Chianina cattle bred on the farm. All this is accompanied by modern oenological techniques, which allow for the creation of a perfect combination of complexity and harmony, typical of the Chianti area. But the excellence of the Tuscan red wines produced here also derives from other factors. First of all, the area, by its nature, is suited to viticulture, due to the high altitude, the marly soils and the warm and dry microclimate with a considerable temperature range. Furthermore, the vinification and subsequent maturation is carried out in wood in cellars positioned on descending levels. In doing so, it is possible to operate by gravity with the utmost respect for the surrounding nature. Finally, thanks to in-depth research on the Sangiovese vines, the characteristics of these grapes that are still partly unpublished are exploited, which enable the production of excellent wines such as Chianti Classico, Flaccianello della Pieve and Vigna del Sorbo. Name and address of producer/distributor: Azienda Agricola Fondoti, 50022 Panzano in Chianti FI. Products from this winery should be stored in a cool, dry place away from heat sources.
