A selection of the best grapes for a single vintage, to best interpret the exclusive character of each Champagne, Dom Pérignon does not exclude the possibility of creating a Vintage, at a time when the vintage is not qualitatively good. The fruit of a slow aging of almost 12 years, Dom Pérignon Rosé Brut is carnal, at the same time light, dark and magnetic. The fruity profile, with an intense aromatic persistence, frees it from the canons of Champagne. The bouquet opens instantly on raspberry and wild strawberry. The fruity notes are combined with powdery notes of iris and violet and vegetal nuances. The first sensations are tactile and silky, which gradually open to sour textures. The finish is affirmed and persists in a scent of peony and white pepper. Its charm makes it elegant in combination with fresh cheeses or fish dishes such as fried, fish soup with tomato sauce, grilled fish.
