Production

Françoise Bedel’s “Entre Ciel et Terre” Extra Brut Champagne is a pure and profound expression of biodynamics applied to the terroir of the Marne Valley. Its production reflects a rigorous artisanal philosophy: dominated by Pinot Meunier, with small additions of Chardonnay and Pinot Noir, this wine is born from mature vines grown on clay-limestone soils. Fermentation takes place partly in small oak barrels and the ageing on the lees is extraordinarily long, often exceeding six or seven years, with minimal dosage (Extra Brut) to allow the wine to express its origins unfiltered.

Organoleptic Characteristics

The colour is a deep golden yellow, marked by a fine, incessant perlage. On the nose, it is complex and textured, with an aromatic spectrum ranging from quince to toasted nuts, enriched by notes of chestnut honey, sweet spices and a pronounced mineral, iodine-like character. On the palate, it is a wine of great character and depth: the attack is decisive, the structure is broad and almost meaty, yet always balanced by a vibrant freshness and a savoury finish that extends its persistence indefinitely.

Occasion and Pairing

This Champagne is an ideal companion for the most refined cuisine. Its remarkable structure makes it perfect with hearty dishes such as white meats in sauce, veal sweetbreads or dishes featuring porcini mushrooms and truffles. It also excels when paired with mature cheeses or fish dishes with great character, such as baked turbot or grilled shellfish. Founded in Crouttes-sur-Marne, in the Vallée de la Marne, the house was born as a family expression of an often less celebrated territory, but capable of offering Champagne with great personality and depth. Francoise Bedel's philosophy is based on an intuitive and respectful approach, in which the vine is accompanied according to natural and cosmic rhythms. Vineyards are cultivated following the principles of biodynamics, with extreme attention to the balance between soil, plant and environment. Each intervention is designed to preserve the vitality of the terroir, promoting healthy and harmonious viticulture, capable of expressing the most authentic soul of Champagne. The vineyards are located on clay-limestone soils of the Vallée de la Marne, where Pinot Meunier plays a central role, alongside Chardonnay and Pinot Noir. Here, thanks to a favorable microclimate and careful and conscious management, grapes are born rich in character, structure and aromatic complexity. In the cellar, the work follows the same philosophy of respect and precision: spontaneous fermentations, use of indigenous yeasts, long refinements on the yeasts and minimal intervention to preserve the purity and identity of the wine.
