TASTING NOTES

Production

Dom Pérignon’s Brut Vintage Champagne is produced exclusively in vintages deemed exceptional and embodies the Maison’s vision of time and harmony. Each vintage is a unique creation, the result of a careful selection of the finest grapes from the Grand and Premier Crus of Champagne. The blend is based on Pinot Noir and Chardonnay in proportions that vary according to the vintage, with the aim of achieving a perfect balance between structure and finesse. The grapes are harvested by hand and vinification is carried out with extreme precision, plot by plot. The second fermentation follows the Méthode Champenoise, with a very long ageing on the lees that allows the wine to develop depth, complexity and an extraordinary capacity for evolution. The Brut dosage is calibrated to enhance purity and elegance. E=314 KJ/75 kcal

Organoleptic Characteristics

Visually, it presents an intense, luminous straw-yellow colour, with a very fine, persistent perlage. On the nose, it is broad, complex and layered, with aromas of ripe citrus and white and yellow-fleshed fruit, accompanied by notes of white flowers, almond, brioche, delicate spices and subtle mineral undertones. On the palate, it is creamy and deep, with silky bubbles, vibrant freshness and an elegant, enveloping structure. The finish is extremely long, harmonious and constantly evolving.

Occasion and Pairing

An iconic and highly prestigious Champagne, ideal for special occasions and important celebrations. It pairs magnificently with haute cuisine, fine shellfish, caviar, substantial fish, refined white meats and complex gastronomic creations. It is also extraordinary as a meditation wine.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
