Selection of the best Pinot Noir and Chardonnay grapes for a single vintage, to best interpret the exclusive character in every Champagne. The grapes of this late harvest reveal an ideal balance between acidity and roundness and a beautiful aromatic richness. After processing at least eight years, Champagne Dom Pérignon Vintage Brut reaches its perfect balance. The nose is complete and fickle, a combination of flowers and fruits, followed by vegetable and mineral notes. The bouquet is tactile, a discreet invitation to follow nuances of white flowers, surrounded by the sweetness of apricot and mirabella, and then reach rhubarb, mint and white pepper. The palate is energetic and vibrant, elegant and tonic perlage. The finish converges on sour and bitter notes, narrowing into spicy and spicy notes of ginger, tobacco and roasted aromas. Its charm makes it elegant in combination with raw fish appetizers, steamed shellfish and delicate second courses. To fully appreciate its style, this Champagne should be served at a serving temperature of 8/10 ºC.
