TASTING NOTES

Production

The Cabernet Sauvignon, Merlot and Sangiovese grapes are harvested exclusively by hand. The average age of the vines is 20 years. Vinification begins with alcoholic fermentation in open, truncated-conical wooden vats, whilst malolactic fermentation takes place in barriques. Ageing continues for 18 months in first- and second-use barriques, after which the red wine undergoes stabilisation for a minimum of 12 months in the bottle.

Organoleptic Characteristics

In the glass, the deeply concentrated ruby red wine offers aromas of red plums, coffee and star anise, against a mentholated and balsamic backdrop, with a toasty finish. On the palate, it is full-bodied and robust, with perfectly integrated tannins that support a well-balanced profile, leading to a long, savoury, spicy and almost peppery finish.

It is only natural to pair one of our country’s most important wines with a special occasion, served alongside flavourful red meat dishes or game.

THE WINERY

Grattamacco

The name of the Grattamacco winery derives from “macco”, a word that meant “iron” in ancient Etruscan. The soil in which its vineyards are rooted is rich in minerals. In Tuscany, high up in the hills of the Bolgheri DOC, siblings Maria Iris and Claudio Tipa have been involved in the production of some of the most sought-after labels by lovers of good wine since the late 1970s. Grattamacco's vineyards are spread over 27 hectares and surrounded by a dense forest that separates them from the surrounding vineyards. This protective cordon contributes to the creation of a unique microclimate, favouring the cultivation of red varieties, such as Sangiovese, alongside white grapes, such as Vermentino. At the Grattamacco winery, part of the Collemassari group since 2002, the entire production process is carried out respecting the principles of organic agriculture and the host environment. The selections are selected manually and each grape is very carefully examined. Fermentation takes place with natural yeasts, giving each of the Grattamacco wines an intense aroma and strong personality. Name and address of producer/distributor: Grattamacco - Loc.
