Le Serre Nuove dell'Ornellaia represents the second wine of Tenuta Ornellaia, featuring a blend of 44% Merlot, 30% Cabernet Sauvignon, 13% Cabernet Franc, and 13% Petit Verdot. This wine combines pleasantness and complexity in taste and aroma with great aging potential. The grapes are harvested manually, with a selection of the bunches on a double sorting table before and after destemming, followed by a gentle crushing. In addition to manual selection, optical sorting has also been introduced to enhance the quality of the selection. Each variety and parcel is vinified separately. Alcoholic fermentation takes place partly in stainless steel tanks and partly in concrete tanks at a constant temperature between 22-28°C for two weeks, followed by a maceration on the skins for 10-15 days. Malolactic fermentation occurs in stainless steel tanks, and the wines are then transferred to new and second-use barriques. The wine remains in barriques at the Ornellaia cellar for about 15 months. After the first 12 months, blending takes place, and the wine is reintroduced into the barriques for an additional 3 months. The wine remains in the bottle for six months before being released to the market. In the glass, it shows an intense ruby red color with purple and violet reflections. Le Serre Nuove dell'Ornellaia boldly reveals a clear and generous aromatic expression, accompanied by scents of ripe red fruits. On the palate, the wine is soft, round, and enveloping, yet simultaneously full-bodied and tannic, showcasing great balance, structure, and elegance in the finish. Its determined expression makes it perfect for pairing with pasta with meat sauce or with second courses of braised red meat. To fully appreciate its style, this wine should be served at a temperature of 16-18°C."
