TASTING NOTES

For several years, Patrik and its sustainable philosophy have been experimenting with low-impact cultivation and the vinification of resistant varieties of piwi. This white is produced from Sauvigner Gris, Bronner and other white berried piwi grapes. Vinified in steel only, it is a fragrant, pungent and vegetable wine. Notes of white pepper and exotic fruit. Important freshness to the sip. Suitable for any occasion, even as an aperitif, it is perfect with seafood dishes such as linguine alla scoglio or Catalan lobster. THE WINERY

Ansitz Dornach Patrick Uccelli

Patrich took over the small plots of land in Dornach from his mother and began overseeing the vineyards, approaching biodynamics and becoming one of Alois Lageder's first members of the co-operative. For about 10 years now, he has been bottling his own wines following his idea of “sustainable wines”, whereby he tries to go beyond biodynamics by creating a farm that is as self-sufficient as possible. The location above the village of Salorno, a particularly cool and windy area at the bottom of Alto Adige, favours slow and balanced maturation. Everything in the winery is done with as little intervention as possible in order to keep the wines as light and drinkable as possible.
