TASTING NOTES

Production

Fermentation lasts approximately 3 weeks and takes place in temperature-controlled stainless steel tanks at 27°C. The skins remain in contact with the wine during post-fermentation maceration, using the traditional submerged cap method, for a further 4 weeks. After racking, the wine remains in steel for malolactic fermentation and is then transferred to barrels. This is followed by ageing for approximately 24 months in 25-hectolitre oak barrels and 12 months in concrete tanks.

Organoleptic Characteristics

In the glass, it presents an intense ruby red colour tending towards garnet. The nose offers notes of dried violets and roses, small red fruits, with finishing touches of pepper and tobacco. On the palate, it is full-bodied and elegant, characterised by a pleasant freshness and smooth yet lively tannins.

Occasion and Pairing

An excellent wine for Sunday lunches, it is perfect with braised red meats, game and mature cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
