TASTING NOTES

Production

The grapes were manually selected three times: directly on the vine, whole on the sorting tables, and finally berry by berry after destemming. The fermentation took place in vertical vats, with punch-downs and gentle wetting of the cap. The cap was then submerged for nearly two months. Malolactic fermentation occurred in stainless steel during the spring following alcoholic fermentation. The aging lasted 28 months in large Slavonian oak barrels, primarily 25 and 50 hectoliters in size.

Organoleptic Characteristics

The notes of cherry in spirits slowly blend with berries, violets, and withered roses. In the glass, it presents a brilliant ruby red color, and on the palate, it reveals its full complexity and structure with good acidity and soft, silky tannins.

Occasion and Pairing

Its elegance makes it a perfect pairing with meat-based pasta dishes, game, or aged cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16-18°C.
