Barolo Acclivi comes from a vinification of 100% Nebbiolo grapes, coming from the Verduno area characterized by a light limestone soil, with a balanced presence of clay, sand and silt that allows good water retention. The harvest is carried out by hand, in order to preserve the integrity of the fruit and allow a selection of grapes both in the vineyard and in the cellar. The bunches are then de-stemmed and the must moved by gravity in open French oak vats where alcoholic fermentation takes place. During the maceration of the grapes, delicate removals and fulling are carried out daily. Then follows a malolactic fermentation and subsequent maturation in large oak barrels of Allier for a period of 20-30 months depending on the vintage. After bottling, the wine rests in the cellar for at least 9 months before being put on the market. The glass shows an ancient garnet red, the nose is rich with fruity notes of cherry, blackberry and strawberry. Then emerge floral nuances of violet, aromatic herbs, dry leaves and balsamic notes of licorice. The taste is fresh, gentle and has a remarkable elegance of tannin, with an incredible length. To be enjoyed with a fillet of deer with porcini mushrooms, or with duck breast on the grill. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC.
