TASTING NOTES

Production

The grapes are harvested slightly overripe to enhance the concentration of aromatic components. The drying process continues in special crates in the drying room, where ventilation is monitored daily and adjusted exclusively through natural methods by opening and closing windows. In February, the destemmed and crushed grapes are left in contact with the must inside temperature-controlled fermenters for over twenty days. Maturation and aging: 36 months in Veronese casks of 5 hl and barriques; 12 months in the bottle.

Organoleptic Characteristics

Elegant on the palate, with fruity and spicy notes. It features prominent aromas of ripe fruit and slight floral hints, along with tertiary notes of tobacco, cocoa, and cinnamon. The finish is long, well-structured, and smooth. The name 'Cerasum,' meaning cherry, references the intense aroma of red fruit, cherry, and sour cherry that characterizes this high-quality Amarone. Additionally, the name evokes the ancient tradition of cherry cultivation in the Valtramigna area, where the winery is located. A true excellence!

Bennati

After Antonio Bennati, known as Toni Recioto, a nickname derived from the dried grape wine of the same name, had spent 50 years trading wine in famous straw flasks, his son Annibale founded the Cantine Bennati in 1920 in Cazzano di Tramigna, which today still offers the best wines from the Valtramigna area of Veneto. It is a winery in continuous evolution. New crushing machinery and a new logistics centre ensure efficiency and speed to meet demand. Bennati also has new vineyards where it is implementing plans to reassess the traditional production techniques of its wines. These plans also aim to enhance the offer, limiting production of high quality wines, which can transmit the values of the land with their scents and aromas. The excellence of the Valtramigna production area is an important factor that contributes to the production of some of the most renowned red and white wines of the Veneto region.
