TASTING NOTES

Production

The grapes are harvested when slightly overripe to allow for greater concentration of the aromatic components. The drying process then continues in special crates in the drying room, where ventilation is checked daily and regulated exclusively by natural means through the opening and closing of the windows. In February, the destemmed and crushed grapes remain in contact with the must inside temperature-controlled fermentation tanks for more than twenty days. Maturation and ageing: 36 months in 5-hectolitre Veronese casks and barriques; 12 months in bottle.

Organoleptic Characteristics

Elegant on the palate, with fruity and spicy notes. Aromas of ripe fruit and slightly floral notes prevail, with tertiary aromas of tobacco, cocoa and cinnamon. The finish is long, well-structured and smooth. The name Cerasum, meaning cherry, refers to the intense aroma of red fruit, cherry and morello cherry that characterises this top-quality Amarone. At the same time, the name recalls the ancient tradition of cherry cultivation in the Valtramigna area, the valley where the winery is located. A true masterpiece!

Occasion and Pairing

An excellent wine to pair with red meat, but also perfect for savouring over a meal with friends.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

Allergens: Solfiti

THE WINERY

Bennati

After Antonio Bennati, known as Toni Recioto, a nickname derived from the dried grape wine of the same name, had spent 50 years trading wine in famous straw flasks, his son Annibale founded the Cantine Bennati in 1920 in Cazzano di Tramigna, which today still offers the best wines from the Valtramigna area of Veneto. It is a winery in continuous evolution. New crushing machinery and a new logistics centre ensure efficiency and speed to meet demand. Bennati also has new vineyards where it is implementing plans to reassess the traditional production techniques of its wines. These plans also aim to enhance the offer, limiting production of high quality wines, which can transmit the values of the land with their scents and aromas. The excellence of the Valtramigna production area is an important factor that contributes to the production of some of the most renowned red and white wines of the Veneto region. These include lines of great prestige such as Valpolicella, Amarone, Lugana and Soave. Name and address of producer/distributor: Bennati - Via Legnaghi Corradini, 38 37030 Cazzano di Tramigna VR. Products from this winery should be stored in a cool, dry place away from heat sources.
