TASTING NOTES

Production

Ca' La Bionda’s Amarone Classico, the most famous of Veneto’s red wines, is made from a blend consisting mainly of Corvina and Corvinone, with a small proportion of Rondinella and Molinara. The grapes are usually left to dry until the end of January, losing around 40% of their weight in water. After pressing, the very dense and rich must ferments for a long time at a low temperature in steel vats before being transferred to large oak barrels to age for three years. Once bottled, it remains in the cellars to rest for no less than 8 months before being released for sale.

Organoleptic Characteristics

An Amarone of great concentration and rigour, dark ruby in colour, compact and brilliant. It offers aromas of both fresh and jammed black cherries, a deep, sweet spiciness, and notes of dried fruit. On the palate, it is of great rigour and consistency, dry, powerful, warm and smooth. It finishes long and clean thanks to the tannins.

Occasion and Pairing

Ideal with full-bodied meats, game or mature cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

Allergens: Solfiti

THE WINERY

Ca' La Bionda

In the heart of the historic Valpolicella Classico area, in the municipality of Marano di Valpolicella, lies the Ca' La Bionda winery. Founded in 1902 by Pietro Castellani who always had a great passion for the cultivation of his vines and the vinification of his grapes, the estate covers an area of 29 hectares in the hills, on clay soil at an altitude of between 150 and 300 metres, and with a south-eastern exposure, a favourable position for ripening grapes. The quality of the wines is the result of a family tradition in which passion and sacrifice have gone hand in hand. For more than four generations, the winegrowers and winemakers of the company have dedicated themselves to the processes of cultivating, harvesting, vinification and marketing of Ca' la Bionda products, paying particular attention to the phases of natural drying of the grapes destined for the great wines: Recioto and Amarone, and subsequent ageing in special oak barrels. In the vineyard owned by Piero Castellani, current owner and namesake of the founder, no herbicides or chemical fertilisers are used, and dry stone walls have been restored to create terraces favourable to good maturation of the grapes for the creation of fine red wines from the Veneto region. Name and address of producer/distributor: Ca' la Bionda - Via Bionda, 4, 37020 Marano di Valpolicella VR. Products from this winery should be stored in a cool, dry place away from heat sources.
