L'Abbazia di Novacella è situata a Varna, in provincia di Bolzano, annoverata tra le più antiche attive cantine del mondo. La storia ci racconta che già nel lontanissimo 1177 fu riconosciuto da Papa Alessandro III il possesso dei vigneti adiacenti. Dall'inizio dell'Ottocento sino ad oggi i contadini usano consegnare parte delle uve all'Abbazia dove vengono lavorate per ottenere eccellenti vini. Abbazia di Novacella regala un pizzico di storia ad ogni sorso. I vigneti con cui vengono prodotti i vini bianchi che sono siti nella conca di Bressanone sono tra i più alti d'Italia estendendosi dai 600 fino ai 900 metri mentre i rossi vengono prodotti da vigneti di proprietà a Cornaliano e Bolzano verso i 420 metri. Nelle zone più estreme, la coltivazione è possibile solo nelle esposizioni migliori. Visti i forti pendii furono costruiti muri a secco dall'uomo per attenuare la pendenza. Per la produzione del Klosterbitter, l’Amaro dell’Abbazia al Pino Mugo, vengono utilizzate pigne e germogli di pino mugo. L’infusione per cinque mesi gli conferisce la tipica e netta nota resinosa. Un amaro molto territoriale. Perfetto dopo un pranzo domenicale in famiglia, magari sorseggiandolo leggendo un bel libro o guardando un bel film. Abbazia di Novacella

Nowadays, there are few abbeys still actively involved in the production of wine, despite the wine-making traditions handed down from generation to generation in the respective areas. Novacella Abbey, not far from Bolzano, is one of them: it is a splendid establishment conducted with dedication and commitment by Augustinian monks, a winery capable of combining numbers and quality that few other wineries in Alto Adige are able to do. The altitude between 600 and 900 metres above sea level, and the cool climate and mineral-rich soils are ideal factors in the superb development of the typical aromas and full flavour of the white wines of the Eisack Valley, such as Sylvaner, Kerner, Müller Thurgau, Gewürztraminer and Veltliner. Red grape varieties on the other hand thrive in the Abbey's vineyards in the southernmost parts of the province: Lagrein, vinified at the Mariaheim estate, Pinot Noir, Kalterersee and Moscato Rosa from the Appiano estate. Wine has been produced at Novacella Abbey since 1142, and centuries of experience have been harmoniously combined with modern wine-making technologies. The great passion for tradition and the professionalism of the workers are values that contribute to giving the Abbey's wines the personality and purity that have always distinguished them and that make these Alto Adige wines a true delight for the palate. Wine production at Novacella Abbey is also important for the environment: in the 25 hectares of vineyards owned by the Abbey, and another 50 which are leased, chemical herbicides are banned. Furthermore, any treatments carried out on the plants are targeted and minimally invasive. In the winery, nothing is left to chance, starting with cleanliness and finishing with meticulously monitoring every single step of production. This is how the entire range of Novacella Abbey wines is created.
