Production

After harvesting, the grapes are transported to the winery and gently pressed; fermentation takes place at a relatively low temperature in stainless steel tanks and lasts for around 14 days, after which the wine is aged in small oak barrels (barriques) for 18 months. 76 kcal/319 kJ per 100 ml

Organoleptic Characteristics

In the glass, it has a bright ruby red colour. On the nose, there are immediate notes of small red fruits, currants, raspberries and wild strawberries, along with vegetal and spicy notes such as cinnamon, and a finish of leather and truffle. On the palate, it is dry, smooth, elegant and pleasantly balanced.

Occasion and Pairing

It is perfect for a Sunday lunch and pairs well with red meats; try it with roast beef.

In the winery, the work follows the same philosophy of transparency and delicacy: spontaneous fermentations, precise vinifications and long refinements allow the wines to develop complexity and depth without losing freshness and territorial identity. Dosages are very low or absent, a choice that allows you to preserve the expressive purity and sharpness of the terroir. Stéphane Regnault Champagnes are distinguished by a tense, elegant and luminous style, characterised by great aromatic precision, silky texture and a marked mineral imprint.
