TASTING NOTES

Production

After harvesting, the grapes are transported to the winery and gently pressed. Fermentation occurs at a relatively low temperature in stainless steel containers and lasts about 14 days. It is then transferred to small wooden barrels (French oak barriques) for 18 months.

Organoleptic Characteristics

In the glass, it shows a bright ruby red color. On the nose, it immediately reveals many notes of small red fruits—ribes, raspberries, and wild strawberries—along with vegetal hints and spicy notes like cinnamon, finishing with touches of leather and truffle. On the palate, it is dry, soft, elegant, and pleasantly balanced.

Occasion and Pairing

It’s perfect for a Sunday lunch and pairs well with red meats; definitely try it with roast beef.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14-16°C.

THE WINERY

Stachlburg

Dominating the Vinschgau Valley, an area of growing interest for the production of high-quality South Tyrolean wines, is the imposing Stachlburg Castle. Built in the 12th century, it has been inherited over time by various noble Tyrolean families, to become the home of the renowned Stachlburg winery in 1990, run by Baron Sigmund Kripp. The vineyards of the Stachlburg estate rise on warm, sunny slopes, 650 meters above sea level, where mild air, southern exposure and deep, humus-rich soil favour perfect ripening of the grapes. The different varieties grown, from Pinot Noir to Chardonnay, are all treated with equal care in an effort to transfer the uniqueness of their host territory into the bottle. Tradition and avant-garde are the key words in the management of the Stachlburg winery. Indeed, the winery has embraced the principles of organic farming, respecting nature, people and the environment, as Sigmund Kripp himself points out. These cornerstones are complemented by the use of modern vinification techniques through which elegant, fresh and harmonious red and white wines are obtained.
