Hofstatter is a historic Alto Adige winery, which operates using techniques that combine tradition with an ongoing quest for innovation. Given the exceptional quality of the wines it produces, this aim is easily achieved every year and gives a voice to this terroir’s authentic personality. The winery is headed up by Martin Foradori, heir to an ancient family of winemakers, who, thanks to careful and environmentally-friendly growing methods, creates red and white wines of enormous expressive power, offering balance and elegance. The grapes used to produce this white wine are 100% Pinot Grigio, from vineyards cultivated on the hills of Termeno, an area with light, predominantly marly soil. The favourable exposures and gentle slopes mean that the soil warms as early as first light, which follows the night-time temperature range necessary good flavour development and concentration. Hofstätter applies a streamlined and rigorous vinification process that makes its wines so profoundly linear and distinctive. Immediately after harvesting, the grapes are crushed gently in pneumatic presses. The must clarifies overnight by the force of gravity and then ferments at a controlled temperature. The wine matures on fine lees before bottling. The entire supply chain takes place in stainless steel. A Pinot Grigio with a fruity profile, showing characteristic auburn reflections in the glass. Ripe pear and Golden apple are the first aromas on the nose, followed by a pleasant mineral note. Deep on the palate and a well-balanced acidity with good length, softness and full flavour. A bottle for a thousand occasions, which can be enjoyed every day, either at the beginning of a meal or as an accompaniment to fish and shellfish dishes. The wine also displays good structure.
