Hofstatter is a historic Alto Adige winery, which operates using techniques that combine tradition with an ongoing quest for innovation. Given the exceptional quality of the wines it produces, this aim is easily achieved every year and gives a voice to this terroir’s authentic personality. The winery is headed up by Martin Foradori, heir to an ancient family of winemakers, who, thanks to careful and environmentally-friendly growing methods, creates red and white wines of enormous expressive power, offering balance and elegance. Pinot Bianco Vigna San Michele is a cru produced exclusively using grapes from the vineyard of the same name at 450 metres above sea level, located on the estate that once belonged to Ludwig Von Barthenau. Short maceration on the skins with natural precipitation of the sediment. Malolactic fermentation and subsequent ageing for 15 months are carried out in large barrels, in a 3,000 litre cask on fine lees. Finally, the wine enjoys an additional 6 months of stabilisation in bottles. This is a white wine with structure and personality, offering lively, intense and layered aromas on the nose, initially split between fruity and floral, but then directed towards softer hints of honey and sweet spices. Full and elegant on the palate, enveloping and persistent in the mouth, with a pleasant acidic streak that remains steadfast, supporting and amplifying the typical elegance of the grape variety. Thanks to its elegance and richness on the nose and palate, this wine is the perfect start to an evening, as an aperitif among friends. Also goes well with more complex fish dishes, or with white meats and poultry, but the ideal pairing is medium-aged cheeses.
