Hofstatter is a historic Alto Adige winery, which operates using techniques that combine tradition with an ongoing quest for innovation. Given the exceptional quality of the wines it produces, this aim is easily achieved every year and gives a voice to this terroir’s authentic personality. The winery is headed up by Martin Foradori, heir to an ancient family of winemakers, who, thanks to careful and environmentally-friendly growing methods, creates red and white wines of enormous expressive power, offering balance and elegance. This white wine is the result of carefully selecting the best Pinot Blanc grapes grown on vineyards in Termeno and Cortaccia. Good altitudes and exposures ensure that the light marl soils warm up quickly, and the winds prevalent in these parts of Alto Adige provide the perfect ventilation for the grapes, keeping them healthy and dry. The bunches are lightly pressed and decanted by gravity, before the must is fermented at a controlled temperature of 20°C. This is followed by a long ageing process of 5 months, in stainless steel vessels at a constant temperature, on fine lees. Straw yellow in colour with a pleasant medium intensity. Floral, warm and lingering on the nose. It has marked acidity on the palate, a good wine to keep for developing flavours. Striking in its overall balance. Sharp, fresh and balanced on the palate with a delicate acidity that makes it even more pleasant to drink. A long lingering finish. A straightforward expression of Pinot Bianco for everyday drinking. Pair with appetisers, medium-structured fish and shellfish dishes, or an excellent accompaniment to sushi and sashimi.
