Pas Dosé originates exclusively from Chardonnay grown in the Pochi area of Salorno, on medium-high hills with a western exposure and calcareous soils with clay and porphyry. After temperature-controlled steel winemaking, the second fermentation in the bottle follows (Classical Method), with aging on the yeasts for at least 38 months. Dégorgement occurs without the addition of sugar, using only a refill of internal wine, thus ensuring a Pas Dosé style, extremely dry100 ml: E=327kJ / 78kcal
Bright straw yellow, with very fine, intense and persistent perlage. On the palate it is fresh, dynamic, with enveloping effervescence and feeling of energy due to the long stop on the yeasts; it closes with floral notes, fresh and crunchy fruit, aromatic herbs and an aromatic finish dominated by the alpine character.
It pairs perfectly with large or tight-fibered fish, white meats, savoury preparations such as oily fish, caviar, and traditional Italian dishes with a higher presence of fat or rich sauces.
To fully appreciate its style, this wine should be served at a serving temperature of 10/12°C.
