Pas Dosé is made exclusively from Chardonnay grapes grown in the Pochi di Salorno area, on medium-high hills with west-facing slopes and calcareous soils containing clay and porphyry. Following vinification in temperature-controlled stainless steel tanks, a second fermentation takes place in the bottle (Metodo Classico), with ageing on the lees for at least 38 months. Disgorgement is carried out without the addition of sugar, using only a top-up of the wine from the same batch, thus ensuring an extremely dry Pas Dosé style. 100 ml: E=327kJ / 78kcal
Bright straw yellow in colour, with a very fine, intense and persistent perlage. On the palate, it is fresh and dynamic, with an enveloping effervescence and a sensation of energy due to the long ageing on the lees; it finishes with floral notes, fresh and crisp fruit, aromatic herbs and an aromatic finish dominated by alpine character.
It pairs perfectly with large or firm-fleshed fish, white meats, savoury dishes such as oily fish and caviar, and traditional Italian dishes with a higher fat content or rich sauces.
To fully appreciate its style, this wine should be served at a temperature of 10–12°C.
