Alto Adige Nova Domus is made from 70% Pinot Bianco, 25% Chardonnay and 5% Sauvignon Blanc grapes, which are harvested and selected by hand, followed by gentle whole-bunch crushing and settling by natural sedimentation. This is followed by slow, temperature-controlled fermentation in large oak barrels and partial malolactic fermentation for the Pinot Bianco and Sauvignon grapes only, with ageing for 12 months on the fine lees in traditional wooden barrels. This classic Terlaner embodies all the virtues of its production area and presents itself as a vigorous, multi-faceted wine, enhanced by mineral notes. It fully expresses its potential only after many years of bottle ageing. Nova Domus appears in the glass with a fresh pale yellow colour and slight greenish hues. The aromatic profile of this Terlaner blend is richly layered. A hint of herbs and spices, such as aniseed, mint and sage, alongside fruity aromatic notes, particularly of apricot, mandarin, melon and passion fruit. All enhanced by mineral and salty notes. The effect of Nova Domus on the palate is complex and structured, with a creamy, smooth texture that contrasts with the aromatic and mineral notes, creating an appealing harmony that lingers long in the finish.
It pairs well with caviar, a slice of grilled salmon or roast tuna, but also with a Florentine steak, Roman-style saltimbocca or braised veal shank, aubergine parmigiana or truffle fondue.
To fully appreciate its style, this wine should be served at a temperature of 12–14°C.
