The Alto Adige Nova Domus is composed of 70% Pinot Bianco, 25% Chardonnay, and 5% Sauvignon Blanc, which are harvested and carefully selected by hand. This is followed by gentle pressing of whole clusters and clarification through natural sedimentation. A slow fermentation at controlled temperatures takes place in large oak barrels, with partial malolactic fermentation only for the Pinot Bianco and Sauvignon grapes, followed by aging for 12 months on fine lees in traditional wooden barrels. Blending occurs three months before bottling.
This classic Terlaner embodies all the qualities of its production area and presents itself as a vigorous wine, rich in nuances and enhanced by mineral notes. It fully expresses its potential only after many years of aging in the bottle. Nova Domus appears in the glass with a fresh, light yellow color with slight greenish highlights. The aromatic structure of this Terlaner blend is rich in facets, featuring a veil of herbs and spices, such as anise, mint, and sage, along with fruity aromatic hints, especially of apricot, mandarin, melon, and passion fruit. All of this is enriched by mineral and salty notes. The effect of Nova Domus on the palate is complex and structured, with a creamy and smooth taste that contrasts with the aromatic and mineral notes, creating an enticing symbiosis that lingers long in the aftertaste.
It pairs well with caviar, a grilled salmon steak, or roasted tuna, as well as a Florentine steak, saltimbocca alla romana, or braised veal shank, eggplant parmesan, or truffle fondue.
To fully appreciate its style, this wine should be served at a temperature of 12-14°C.
