The Blanc de Noir Dosaggio Zero represents an exceptionally precise and generous expression of Pinot Noir, vinified in purity. After the primary fermentation, the wine ages until June, followed by a secondary fermentation in the bottle, resting on the lees for over 4 years. After a manual remuage of about 4 weeks, the wine is disgorged without the addition of liqueur de dosage, using only the wine itself, creating a Dosaggio Zero of incredible structure.
"In the glass, it appears a golden yellow with a fine and persistent perlage. Initially, it offers an intense aroma of white fruit, mint, and fresh flowers, before unfolding into hints of red fruits and a touch of smokiness.
Its remarkable persistence, combined with incredible freshness, makes this wine an excellent accompaniment for the entire meal. It is particularly well-suited for pairing with dishes featuring fish and shellfish.
