THE WINERY

Nikolas

Spending his childhood immersed in the greenery of Collio Goriziano as a child, it was natural for Nikolas Juretic to become passionate about viticulture. After enriching his experience and knowledge of the world of oenology by travelling the world, he started making his own wine. A large part of the Nikolas vineyards extend on the eastern slope of Monte Quarin, in Friuli-Venezia Giulia. Among the rows are important indigenous grapes, such as the Malvasia and Ribolla gialla varieties, and a sublime juice is obtained from the mix. Not far away is also the small Nikolas winery, located in Cormons, in the province of Gorizia, inside an elegant villa. Production is deliberately kept low so that each bottle is unique, the result of research and ageing. From the maceration of the skins in wooden barrels, to the pressing with feet, like in the olden days, to the spontaneous fermentation, without the addition of sulphites, all the processes of grape processing are followed with the utmost attention to detail.
