The manual harvest takes place at the end of September, during which a portion of the Merlot grapes is naturally dried for about 20 days in well-ventilated crates. The winemaking occurs in stainless steel at a controlled temperature, followed by aging for 12 months in medium-toasted French oak barriques. The wine presents a bright ruby red color, enriched by violet reflections. On the nose, it opens with intense fruity notes of ripe cherries and plums, accompanied by a citrus hint reminiscent of blood orange. Delicate floral notes of rose and violet harmoniously integrate with a touch of vanilla and hints of toasted nuances and cocoa. It is a structured wine, well-balanced, with good length on the palate, where the toasted aromas return with a recall of coffee. It pairs beautifully with flavorful dishes, rich sauces or truffle pasta, as well as roasted and grilled meats and game dishes such as wild boar or deer. This red wine, structured in its youth, promises good evolution with maturity. It is recommended to serve it in a wide glass at a temperature of 16-18°C.
