Production

Tradition and innovation characterise and define the Zýmē winery, situated in the heart of the Valpolicella Classica region in a 15th-century sandstone quarry, now renovated, which symbolises the strong bond between the winery and the local area. The winery, whose name literally means ‘yeast’, operates under organic farming practices, with a particular focus on respecting nature and crafting new wines that showcase the Valpolicella region. From Black To White is a label with a clean, minimalist design that plays on the black-and-white contrast, alluding to the genetic mutation of the Rondinella grape from red to white. In short, this wine from Zýmē represents a wine that did not previously exist, and is composed of 60% white Rondinella, 40% Gold Traminer, 15% Kerner and 10% Incrocio Manzoni. The grapes undergo crushing and destemming, followed by cryomaceration on the skins and temperature-controlled alcoholic fermentation in concrete tanks for approximately 20 days. Ageing takes place on the lees for at least 6 months with frequent bâtonnage.

Organoleptic Characteristics

In the glass, From Black To White appears pale golden yellow with greenish highlights. It has excellent viscosity; on the nose, it reveals hints of white flowers such as acacia and primrose, fruity notes such as Golden Delicious apple and grapefruit, and aromatic herbs such as elderflower.

Occasion and Pairing

Delicate and elegant, it is excellent as an aperitif and also pairs beautifully with shellfish, fish, asparagus risotto, herbs and spicy dishes.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

THE WINERY

Zyme

The name Zýmē comes from the Greek and means yeast, a fundamental element in the world of oenology, but also a symbolic element that recalls naturalness. Nature is also emphasised in the architectural construction of the company. Founded by Celestino Gaspari, the Zýmē winery represents the true synthesis between man and terroir and is located in the heart of Valpolicella Classica in San Pietro in Cariano, in an ancient sandstone quarry dating back to the 15th century. Looking at the winery from above, one can see the pentagonal shape of the vine leaf, and each tip corresponds to one of the five main elements for wine production: man, vine, earth, sun, water. The various production processes also take place in accordance with nature's timing and through a special knowledge of production processes. Geologically speaking, we are located on the slopes of the Lessini Mountains, in a soil consisting of marly and earthy limestone also known as “Pietra Gallina”, which gives minerality and freshness to the Zýmē wines. In perfect balance with the winemaker's idea of sustainability, the Zýmē winery has always sought to revalue and enhance the indigenous grape varieties cultivated in nine hectares of vineyards.
