Production

Valpolicella Ripasso is produced using the ‘ripasso’ technique: a second fermentation of Valpolicella Classico on the still-moist, sweet pomace of Amarone and Recioto. Brigaldara presents it in a classic style with the traditional blend of Corvina, Corvinone and Rondinella. The wine, fermented and stored in stainless steel, spends five days on the pomace of the freshly racked Amarone, before moving to large barrels for the following 18 months to complete its ageing. E = 337 kJ/81 kcal per 100ml

Organoleptic Characteristics

Valpolicella Superiore Ripasso is a beautiful, bright red with transparent ruby hues. The nose is immediate yet displays good complexity and terroir, with ripe cherry at the forefront, accompanied by a subtle spicy note and sweeter nuances from the Recioto pomace. On the palate, it has good structure and body, maintaining a lively and smooth character.

Brigaldara

With its characteristic 16th century villa surrounded by magnificent vineyards, the Brigaldara winery in San Floriano, owned by the Cesari family since 1928, dominates the Vallata di Marano, one of the four valleys of the historic Valpolicella area. The secret of these Veneto wine producers lies in the winemaking process, a crucial element of the Brigaldara identity. Supported by significant wine-makers such as Roberto Ferrarini, one of the most important innovators in the history of Amarone, the members of the Cesari family have in fact adopted important innovations for their production facilities and the cellar. Lamberto and Antonio, the current owners, encourage a specialised layout of the vineyards with constant love and passion, based on the varieties best suited to each area of their 120 hectares.
