TASTING NOTES

Valpolicella Classico Superiore Alessandro is dedicated to the founder of the winery, from a centenary vineyard that produces grapes of extraordinary expressiveness. Powerful and intense in the scents as graceful and fine on the palate, it defines a Valpolicella Classico Superiore of remarkable structure and balance, born from the tradition and made majestic by the wine evolution Farina. This Valpolicella Superiore consists of 70% Corvina, 25% Rondinella and 5% Molinara. After fermentation the wine ages at least 1 year in Slavonian oak barrels and 6 months in cement, with subsequent aging in bottle. The glass shows an impenetrable ruby red color with brilliant reflections. It is fruity and intense to the nose, with fine hints of cherry and ripe raspberry, plum, and blackberries. The aging in wood evokes slight notes of hazelnut and sarawak pepper. The palate is dry, but velvety and well balanced, with a pleasant background of enveloping jam, long cooking as it was prepared once. Of balanced structure, it is expressed with a texture of fine quality and pleasant persistence. It goes well with red meats, boiled meats, roasts, pasta and vegetable dishes of strong flavors and medium-aged cheeses.
