TASTING NOTES

Tradition and innovation characterise and identify the Zýmē winery, located in the heart of the Valpolicella Classica area in a 15th century sandstone quarry, now restored and marking the strong bond between the company and the territory. The winery, whose name literally means “yeast”, works under an organic farming regime, with a focus on respect for nature and a care for new wines that enhance the Valpolicella territory. Valpolicella Classico Reverie is represented by a label designed with a light and fast stroke, where the lines represent a glass with smiling faces that recall the emoji used by young people online. Reverie is the junior interpretation of Valpolicella: a wine of tradition but with the future in mind, suitable for every occasion and designed for young people exploring the world of oenology. Valpolicella Classico di Zýmē is composed of Corvina 40%, Corvinone 30%, Rondinella 25% and Oseleta 5%. The grapes are harvested by hand, followed by destemming, crushing and cryomaceration on the skins. Fermentation is carried out with selected yeasts at a controlled temperature and malolactic fermentation is carried out simultaneously. Ageing is carried out in stainless steel for about 6 months. In the glass, it has a pale red colour with bright violet reflections. Light and elegant, on the nose it reveals notes of wild rose, cherry and morello cherry with a slightly peppery finish. Savoury, fruity and medium body flavours are perceived on the palate with notes of strawberry, black cherry and raspberry. With good length, Valpolicella Classico Reverie is a young wine suitable for aperitifs, excellent with cured meats, soft cheeses or white meats. Read more Read less
