Production

Blanc du Blanc is made from 100% Priè Blanc grapes; the wine undergoes its first fermentation in large larch and oak barrels and in stainless steel. Traditional refermentation in the bottle, as required by the Metodo Classico, and disgorgement no earlier than 18 months. Per 100ml: 287 kJ - 69 kcal

Organoleptic Characteristics

In the glass, it is a lively straw-yellow colour with greenish highlights and fine, persistent bubbles. On the nose, it is delicate, floral and fruity.

Occasion and Pairing

Excellent as an aperitif, with a platter of cured meats such as DOP lard, or with a vegetable flan served with fondue.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.

THE WINERY

Cave Mont Blanc

Wonderfully active production, inextricably linked to Mont Blanc, has always characterised the work of the Cave de Mont Blanc winery. In over thirty years of activity, in fact, the company has specialised in classic method production of sparkling wines, focusing on the enhancement of the queen white grape of the Aosta Valley. This delicate process gives rise to Priè Blanc, one of the very few still ungrafted varieties that survived the phylloxera of the late 19th century. In the past ten years of activity, the winery has wanted to further reinforce its close relationship with Mont Blanc by starting production of a small reserve of sparkling wine using the classic method. The particularity of this wine lies in its strategic position: production takes place at an altitude of over 2000 metres. The temperature, the different atmospheric pressure and the unusual processing conditions give the wine unique characteristics, all waiting to be discovered.
